Prawn and Courgette Curry
- 300g King prawns
- 1 Courgette
- 1 Can of coconut milk
- 1 tbsp. Olive oil
- ½ Onion
- 2 Cloves of garlic
- 1 Chilli pepper
- Small piece of ginger
- 1 Stick of lemongrass
- A few kaffir lime leaves
- 50ml Fish sauce
- Black pepper
- Coriander leaf to garnish
- 200g Rice
Chop the onion, ginger & chilli finely and fry them in the olive oil over a medium heat.
After a couple of minutes, crush the garlic and add it to the pan with the prawns.
Add the coconut milk, fish sauce, lemongrass and kaffir lime leaves and simmer. Meanwhile cook the rice.
Peel and slice the courgettes and add them to the pan. Reduce the sauce a little until it thickens.
Once the courgettes have just started to go soft, chop the coriander and add it to the pan, then turn off the heat. Remove the lemongrass and lime leaves.
Serve with the rice and garnish with coriander leaf and black pepper. The fish sauce goes very well as a condiment.
