Apple and Sultana Cake
- 220g Plain flour
- 2tsp Baking powder
- 110g Butter
- 75g Dark brown sugar
- 55g Jaggery
- 2 Eggs
- 75g Dried apples
- 75g Sultanas
- 1½tsp Ground cinnamon
- ½tsp Ground nutmeg
Heat the oven to 160°C fan. Grease and line a 20cm cake tin.
Add 20g of the dark brown sugar to a bowl along with the dried apples, then pour over boiling water and allow to stand for at least 10 minutes. Take them out and reserve the liquid.
Add the flour and butter to a bowl and rub together. Chop the jaggery into small pieces and rub them into the mixture. Then add the rest of the dark brown sugar, the apples, sultanas, cinnamon and nutmeg.
If the mixture is too dry, add some of the reserved liquid.
Add to the tin, and cover the top with extra baking parchment. Bake for 1hr 10min.
