Sweet Potato Fry-Up
- ½ Sweet potato
- ½ Onion
- 1 Red pepper
- 1 Carrot
- 1 Clove of garlic
- Olive oil
- 1 Egg
- 50g Smoked salmon
- ½ Tsp. Coriander powder
- ½ Tsp. Chilli powder
- 1 Tsp. Oregano
- Salt & pepper
Get the smoked salmon out of the fridge to ensure it's at room temperature when serving.
Peel and chop the sweet potato into cubes, and the onion, red pepper and carrot very finely.
Boil the sweet potato cubes for around 10 minutes until just soft all the way through.
Add plenty of olive oil to a frying pan and add the onion, red pepper and carrot. Then turn up to a high heat.
Drain all the water from the sweet potato, then add to the frying pan. Fry until everything has browned.
Peel and crush the garlic, then add along with the coriander powder, chilli powder and oregano. Mix and cook for another couple of minutes.
Add a generous pinch of salt and some black pepper, then empty the contents of the pan onto the serving dish and keep warm.
Fry the egg in the pan until crispy, adding more oil if necessary.
Top the sweet potato with the egg and smoked salmon, and finish with an extra pinch of salt and a grind of black pepper.
