Pineapple Beef
- 500g Cubed Beef
- 150g Pineapple
- 100ml Soy Sauce
- 1 Star Anise
- 3 Cloves
- 1 clove of Garlic
- 1 knob Ginger
- ½ tsp. Cumin Seeds
- Salt & pepper
- 1 tbsp. Sesame Oil
- 100g Chinese Leaf
- 200g Rice
- Handful of coriander
- Sriracha Sauce
Put the pineapple, soy sauce, star anise, cloves, garlic, ginger, cumin seeds, salt & pepper in a food processor.
Blend continuously for 5 minutes until very smooth.
Mix the beef with the marinade and leave for at least 24 hours.
Cook the rice and keep it warm.
Turn a frying pan up to a high heat. Add the sesame oil and the beef chunks, reserving the marinade.
After a couple of minutes, chop the Chinese leaf and fry with the beef. Fry until the beef is cooked through.
Add the marinade to the pan and fry for a couple more minutes.
Serve the rice and beef in a bowl, and garnish with the coriander leaf and sriracha.
