Sweet Potato, Carrot and Green Bean Salad

Heat the oven to 200°. Peel and chop the sweet potato, carrots and red pepper, add the paprika and olive oil, and roast for 30 minutes.

Trim and steam the green beans until just soft. Put into cold water to prevent them softening further.

Peel, crush and chop the garlic clove, and mix with the walnut oil and lemon zest.

Combine the roast vegetables with the green beans, pour over the walnut oil mixture, then season to taste with salt & pepper.

Finally, chop the fresh herbs and mix. Serve warm or cold.
