4-Spice Dry Rub Roast Chicken

- 12 Chicken legs
- 2 tbsp. Rice flour
- 4 tsp. Paprika
- 3 tsp. Allspice
- 3 tsp. Coriander powder
- 2 tsp. Garam masala
- 1½ tsp. Salt
- 1 tsp. Ground black pepper
- 3 tbsp. Olive oil
Heat the oven to 180°.
Mix the rice flour, paprika, allspice, coriander powder, garam masala, salt & pepper in a large bowl.
Skin the chicken legs and coat them in the spice mix. Place in 1 or 2 large baking trays.
Carefully spread the olive oil over the chicken legs using a pastry brush to cover them. Add any remaining spice mix on top.
Roast for 1h, turning after 10 minutes to stop them sticking and again after 30 minutes.
