Pea Shoot and Watercress Salad

- 160g Pea shoots
- 160g Watercress
- Handful of Parsley
- Handful of Basil
- Handful of Coriander
- 500g Feta cheese
- 2 tbsp. Sesame seeds
- 2 tbsp. Olive oil
- 1 tbsp. Balsamic vinegar
- Salt & pepper
Wash and mix together the pea shoots, watercress, parsley, basil and coriander.
Chop the feta cheese into small cubes and mix together. Mix in the sesame seeds.
Using a fork, whisk together the olive oil with the balsamic vinegar, salt & pepper to make a dressing.
Mix the salad with the dressing just before serving.
